We've been wanting to try cold dry-hopping for a long time. Normally we dry-hop fairly warm, around 16-18 degrees C this results in more yeast interaction and slightly fruitier flavors. However, for this beer we chilled the finished fermented beer down to 0 C and then dry-hopped it. This results in a "cleaner" hop profile and an almost white wine like character. We dry-hopped it exclusively with Ella, an Australian hop which is the half-sister to Galaxy.
This beer's name is a quote from Carl Segan, the famous astrophysicist and astronomer. This label depicts the unfortunate tendency we humans have of putting profit over nature.
