For this Blend #89 of Cuvée Miel, the blenders at 3 Fonteinen combined three separate batches of aged lambic, each brewed with their own honey. After extended maturation in dedicated barrels, the lambic was blended with a small amount of young lambic and a portion of honeycomb-infused lambic. The result is a Gueuze with an average age of over 30 months, with an 8.9% alcohol content.
