Dive into the mystical world of "Doom Witch," a Barrel-Aged Flanders Red Ale with Strawberries. This brew is a tribute to the age-old Flanders Reds and their enchanting flavors. "Doom Witch" is a carefully blended sour red ale, consisting of 80% 'young' stock beer aged in steel and 20% 'mature' stock beer aged in Scottish whisky barrels from Longmorn & North British.

This intriguing blend yields a delightful sweet and sour flavor profile with a hint of subtle oak. To elevate the experience, the base beer was transferred onto the remnants of tayberries and lees from our previous batch of Spectral Lore. This unique concoction underwent a second fermentation, enriched with an abundance of locally sourced Scottish strawberries from the bountiful 2023 harvest.

All the strawberries were lovingly gathered from farms within a 30-mile radius of the brewery. "Doom Witch" is a bewitching experience, where every sip unravels layers of flavor and a touch of Scottish terroir. At 6%, it's the perfect elixir for those who appreciate complexity in their brews.
