The 2013 Nielstrupmark Cherry Wine is a versatile pairing with an exquisite balance of fruitiness and structure. Its low alcohol content and delicate acidity make it the ideal accompaniment for classic cheeses, such as firm, sheep's, and cow's milk cheeses. It also pairs exceptionally well with blue cheeses, desserts featuring dark chocolate, nuts, raw pickled berries, or game and rich, sweet simmered dishes. To capture the maximum fruit expression, the wine is directly bottled from stainless steel tanks, sourced partly from young trees in Skælstrupmark for added fruitiness and charm, and partly from the oldest trees in Nielstrupmark for structure and intensity. The berries undergo wild fermentation for 2-4 days to enhance complexity, and are then pressed and fermented in stainless steel tanks to maintain their fruit flavors. To enhance its flavors, it is recommended to decant the wine for 2-3 hours before serving. Enjoy the nuanced flavors and exquisite balance of 201
