INTENS KIRSEBÆR

Vores årgangsvin er vores mest frugtige vin, hvor Stevnskirsebærrene virkelig kan smages. Ligesom en vintage-portvin har vinen ikke set dagens lys. For at få maksimal frugt har kirsebærrene vildgæret i 2-4 dage straks efter høsten. Herefter har vinen udviklet sig i ståltanke, indtil den tappes direkte i flaskerne et år senere. Denne metode bevarer frugten bedst muligt og fastholder den intense smag af kirsebær.

Årgangsvinen fra Frederiksdal er en smuk introduktion til, hvad Stevnsbærret kan. Bærrene kommer fra vores yngre træer på Skælstrupmark, der giver friskhed og frugtighed, samt en smule fra vores ældste træer på Nielstrupmark, der giver rygrad og yderligere intensitet.

Our Vintage is a classic from Frederiksdal Cherry Wine. It is our most fruity wine, made on the Nordic grape; the unique Danish Stevens Cherry exclusively with cherries from our own orchards.

VINIFICATION:The cherries come from our young trees, which give fruit and freshness, and a bit from our oldest trees, which adds structure and intensity.

The cherries are fermented on skins and stones for 4-5 days to add more complexity and taste. Then the cherries are pressed and fermented on steel tanks, as it preserves the fruit flavor best.

HISTORY IN A BOTTLE

This is our premier wine and one that is inspired by the finest traditions of sherry making. In simple terms, the Solera System means that, every year, a small portion of a wine is drawn from a row of barrels which is then replenished with young wine. The young wine quickly takes on the characteristics of the older wine (this is not unlike using a sourdough starter to make bread). On the whole, this process produces wine with an increasing complexity as the years pass.

The Solera is the sum of our history in a bottle. The Solera System (the barrels used and the wine produced in this fashion) takes us back to our very beginnings in 2006. We replenish the barrels with only our best vintages. With our solera system, we have produced a total of 1,251 litres of wine, which is divided between 450, 226 and 125-litre barrels. However, we never draw off more than 150 litres (or 300 bottles worth of wine) a year, because we want to preserve and refine the unique character of our system! All our bottles are numbered and marked with our signature. The bottling year is marked with a hashtag (#).
